Pumpkin Cupcakes

At one of our meetings it was discussed Making cupcakes from just a box mix and can of pumpkin. So we thought it sounded intriguing. I browsed the web and found a couple different ones and decided on one to test out. We decided to try it as a Chocolate recipe and then as a simple Pumpkin recipe.

Chocolate Pumpkin Cupcakes
1 box triple chocolate fudge cake mix (do not use Dark Chocolate Cake mix!)
1/3 cup applesauce
1 can plain pumpkin (15 ounces)
1/4 cup water
2/3 cup semisweet chocolate chips
PREPARATION
Preheat oven per directions on Box.
Mix all ingredients. Divide batter to make 24 cupcakes.
Bake about 20 min, til toothpick comes out clean.


Pumpkin Cupcakes
1 box yellow cake mix
1/3 cup applesauce
1 can plain pumpkin (15 ounces)
1/4 cup water
2/3 cup chopped Pecans
Cinnamon and Nutmeg to taste...you will need about 1tbl cinnamon 1/2 tbs nutmeg
PREPARATION
Preheat oven per box.
Mix all ingredients. Divide batter to make 24 cupcakes.
Bake about 20 min til tooth pick comes out clean.

We bought fat free cool whip to use on them, alas we didn't get that far haha..but we did enjoy them. The white ones stuck a bit to the paper, the chocolate came out nicely! pretty good flavor, I may play with the idea's of them more to maybe make a better cupcake, but either way we really liked them, and they were only 2pts each!

That's an interesting idea. I kind of like the idea of using the boxed mix as a shortcut for days that I don't have lots of time.

I love this cake. I've made it a lot over the years. For the pumpkin one, I used a spice cake mix. A great WW treat!
How have you been! I haven't spotted by in a long long time. I'm asumming WW since you mentioned meetings and this recipe. How's going???
